Yummy Carrot and Coconut Cake!

How to make a tried and tested, delicious, Carrot/Coconut cake:

  • 500 g carrots
  • 6 eggs
  • 250 g sugar
  • 1 pack of Vanilliasugar
  • salt
  • 1 lemon
  • cinnamon
  • 200 g coconut flakes
  • 100 g hazelnuts grinded (I used almonds)
  • 75 g flour
  • 75 g breadcrumbs
  • 2 teaspoons baking powder

Grate the carrots. Put egg yolk and egg white apart.


Mix: 200g of sugar with the Vanillasugar until creamy.


Add: a bit of salt, lemon peal, a bit of cinnamon, carrots, coconut, hazelnut, flour,breadcrumbs and the baking powder.


Beat the egg whites until stiff and slowly add the remaining 50g of sugar. Mix this with the carrot dough.


Bake for 200°C for about 30-40min


You can cover it either with chocolate, or with sugar glaze icing...or whatever you like :) This is a great one for Children's parties!
