News Just In - Tuna Sandwiches Could Help Prevent Sight Loss!
According to news just out, tuna sandwiches can help to protect your vision in old age. So here is a great tuna sandwich to make the process enjoyable!
Tuna Sandwich with Red Pepper and Olives
Depending on the size of the bread, this can be made for one, or two people.
Preparation Time: 10 minutes - possibly a bit longer if you need to roast the pepper.
Ingredients:
- Ciabatta Bread
- 125g can of tuna in olive oil preferably
- A hard-boiled egg - this is optional
- 1 tomato - cut in half
- Either a can of cooked red pepper in olive oil, or a roast a red pepper yourself (roast it in olive oil and season it with salt and pepper)
- A few olives stuffed with anchovies
- Either a little finely sliced onion, or some chives
Preparation:
- Boil an egg and once it is hard-boiled (approx. 5 minutes or boiling), peel and slice it and roast the red pepper if you don't have the tinned variety.
- Slice the ciabatta bread and smear the bread with the tomato, discard the tomato halves after smearing the juices on the bread.
- Drain the tuna and slice it, also slice the roasted red pepper (into small strips), and the olives.
- Layer the ciabatta with the tuna, the pepper and the olives.
- Finally place the sliced egg with either the sliced onion, or the chives on top and eat immediately.
