Great Recipe for Autumn – even if it feels like winter already!
Cretan Style Chicken – I didn’t make the name up btw!
- 2 Aubergines
- 6 Courgettes
- 4 large tomatoes
- 1 bulb of garlic
- 1 tablespoon of chopped fresh mint – buy from any supermarket J
- 1 teaspoon dried thyme (or, one tablespoon of fresh)
- 1 teaspoon dried fennel leaves (or, one tablespoon of fresh)
- 1 teaspoon dried oregano (or, one tablespoon of fresh)
- Olive Oil
- 1 Chicken – about 2kg
- Salt and black pepper
- 1 lemon
- Splash of balsamic vinegar
- Preheat the oven to 180C
- Chop the aubergines, courgettes and tomatoes into bite-sized pieces and check them in an ovenproof casserole dish
- Split the garlic into cloves, leave the skin on and put with the chopped vegetables
- Sprinkle the herbs over the top with a little salt and black pepper.
- Splash olive oil over the vegetables (vegetable oil will do too)
- Mix it all up with your hands
- Take the chicken and place it on top of the chopped vegetables
- Squeeze the lemon juice over the chicken and then put the squeezed halves inside the chicken
- Season with a little salt
- Place in the oven for 1 hour and then test to see if the chicken is cooked
- Remove the chicken and the vegetables from the casserole dish – Keep It Warm
- Put the casserole dish on the hob and allow it to rest so that you can skim off the excess chicken fat
- Put in a splash of balsamic vinegar and bring to a simmer
- Check the seasoning and serve using the vegetable juices as a sauce
Eat it cold or hot and why not serve with boiled or roasted potatoes?
